This recipe is SO easy and SO delicious. My clients rave about it and it is one of my favorites as well. This is a healthy easy dinner you can cook up for the family or meal prep and have for the week!
Ingredients: • 1 lb Turkey Kielbasa or 1 lb shrimp • 2 medium, Zucchini • 2 medium, Yellow Squash • 2 Tbsp, Extra-Virgin Olive Oil • 2 tbsp(s), Cajun Seasoning (or seasoning of choice) • 1 medium,Sweet potato
Directions: 5) Cook kielbasa or shrimp as directed on package in a large skillet. Remove from pan and set aside 6) Chop sweet potatoes into cubes and cook in same pan 7) Once sweet potatoes begin to brown, add chopped zucchini, squash, EVOO, and seasoning. 8) Mix together and allow to cook for another 5-10 mins. 9) Take pan off heat, add kielbasa or shrimp back into pan and mix together. 10) Separate into 5 equal parts into containers for the week or serve immediately for dinner.
