Zucchini Lasagna Boats


These delicious boats are a great alternative to a carby plate of pasta or lasagna. They are just as good and a great healthy dinner you won’t get bored with. 

Ingredients: • 2 tbsp(s), Fresh grated parm • 2 squash, Cooked • 1 tbsp, Parsley, fresh • 1 cup, Marinara Sauce • 0.50 cup, Cheese, ricotta, part skim milk • 0.50 cup, Fat Free Mozzarella • 8 oz, Ground Beef

Directions: 1. Preheat oven to 400 F. 2. Cut zucchini in half lengthwise and carve out the middle, leaving about 1/4 inch of flesh around the sides so that the zucchinis will still keep their shape. Tip: score the shape with a knife as a guide, then used a spoon to scrape out the middle. 3. In a small bowl, mix together ricotta cheese and parsley until smooth, then fold in 1⁄4 cup mozzarella. 4. In a skillet over medium-high heat, brown ground beef and drain any excess grease. Mix ground beef with marinara sauce. 5. To assemble zucchini boats: evenly fill zucchinis with cheese mixture so that the bottoms are covered .Finish by topping each zucchini with meat and sauce mixture. 6. Cover baking dish with aluminum foil and bake zucchini boats for 30 minutes. Remove foil and sprinkle tops of zucchini boats with remaining mozzarella, then bake uncovered for an additional 5 minutes. When ready cheese should be melted and zucchinis should be soft. 7. Sprinkle Parm cheese on top.
